Description
An easy one-pot dinner made with tender chicken thighs, cavatappi pasta, crushed tomatoes, pesto and creamy Boursin cheese.

- 2 cups chicken broth
- 8 oz cavatappi pasta
- 24 oz boneless skinless chicken thighs, cut into bite size pieces
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 1/2 tsp olive oil
- 14 oz crushed tomatoes
- 1 small can sliced mushrooms, drained
- 1/4 cup prepared pesto
- 1 (5.3 oz) package Boursin cheese
Instructions
- Pour broth into Instant Pot. Add in the pasta and then the chicken on top of the pasta. Sprinkle in the salt, pepper, garlic powder and Italian seasoning. Drizzle in the olive oil. Dump in the tomatoes and mushrooms.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the pesto and Boursin until it melts. Scoop onto plates and enjoy.
