Description

Crash Potatoes are tender red potatoes that are smashed, seasoned, cheesed up and baked until crispy. 


Ingredients

Scale
  • 1015 red potatoes (ping pong size)
  • 3 Tbsp olive oil
  • Kosher salt
  • Fresh cracked pepper
  • Dried dill
  • Parmesan cheese

Instructions

  1. Add 1 ½ cups water into bottom of Instant Pot. Add washed potatoes into a steamer basket. Drop the steamer basket into the Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes (ping pong size potatoes) or 20 minutes (tennis ball size potatoes). When time is up move valve to venting. Remove the lid.
  3. Preheat oven to 450 degrees. On a sheet pan drizzle 2 Tbsp of olive oil. Place potatoes on the sheet pan equally spread out and sitting in the olive oil.
  4. With a potato masher gently press down on each potato until it slightly mashes and then rotate the masher 90 degrees and mash again.
  5. Brush the potatoes with the remaining olive oil. 
  6. Sprinkle each potato with kosher salt, pepper and dill to taste. 
  7. Bake for 20 minutes. Sprinkle a tablespoon of shredded parmesan cheese on each potato and bake for 5 more minutes.
