Description

A 5-ingredient Instant Pot or Crockpot chicken and stuffing casserole that’s super fast and low effort to put together.


Ingredients

Scale
  • 1 1/4 cups chicken broth
  • 1 pound boneless skinless chicken thighs (I used frozen)
  • 1/4 cup butter
  • 1 (6 oz) package Stovetop chicken stuffing
  • 1/2 cup sour cream

Instructions

Instant Pot Instructions:

  1. Add broth, chicken and butter into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  3. Place chicken on a cutting board. Sprinkle the stuffing mix into the pot and then cover the pot and let sit on warm for 5 minutes. Cube the chicken and then stir it into the pot. 
  4. Stir in the sour cream.
  5. Serve and enjoy!

Slow Cooker Instructions:

  1. Add broth, chicken and butter into slow cooker. 
  2. Cover and cook on low for 3-4 hours.
  3. Place chicken on a cutting board. Sprinkle the stuffing mix into the slow cooker and then cover and let sit on warm for 5 minutes. Cube the chicken and then stir it into the slow cooker. 
  4. Stir in the sour cream.
  5. Serve and enjoy!
