Description
Tender and moist chicken with Carolina barbecue sauce made fast in your Instant Pot or slow and low in your Crockpot.
Ingredients

- 1/2 cup chicken broth
- 2 pounds boneless skinless chicken breasts and thighs (I do half and half)
- 1/2 tsp kosher salt
- 1 cup Cousin Eddie’s BBQ Sauce
Instructions
Instant Pot Instructions:
- Pour broth into Instant Pot. Add in the chicken. Sprinkle chicken with salt. Pour half of the BBQ sauce over the chicken.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes on LOW pressure. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid.
- Use tongs to place the chicken on a cutting board.
- Turn Instant Pot to saute (“more”) setting and let the sauce and liquid in the pot simmer and reduce down for 10 minutes.
- Meanwhile, shred or chop the chicken. Once sauce has reduced stir the chicken into the pot. Stir in the remaining barbecue sauce.
- Serve the chicken and enjoy on salads, sandwiches, with baked potatoes, etc.!
Slow Cooker Instructions:
- Add chicken into slow cooker. Sprinkle chicken with salt. Pour the BBQ sauce over the chicken (no broth needed for slow cooker version).
- Cover and cook on low for 4-6 hours.
- Use tongs to place the chicken on a cutting board. Shred or chop the chicken. Return the chicken to the slow cooker and stir in with the juices.
- Serve the chicken and enjoy on salads, sandwiches, with baked potatoes, etc.!
