Copycat Cracker Barrel Meatloaf

Description

This copycat meatloaf recipe has beef, Ritz crackers, cheddar and a sweet tangy glaze. 


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 small onion, finely diced
  • 1 small green bell pepper, cored and finely diced
  • 45 Ritz crackers, crushed (about 1 1/2 sleeves)
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup half and half
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 16 oz lean ground beef (85/15)
  • 16 oz lean ground turkey
  • 2/3 cup ketchup
  • 2 Tbsp brown sugar
  • 1 tsp yellow mustard

Instructions

  1. Heat oven to 350° F.
  2. Heat oil in a pan over medium high heat. Add in the onion and bell pepper and saute for 5-7 minutes, until softened. Set aside to cool.
  3. In a large bowl stir together the Ritz, eggs, cheddar, half and half, salt and pepper.
  4. Add in the green peppers and onions and stir. Add in the ground beef and ground turkey and use your hands to mix until the ingredients are evenly distributed. 
  5. Form the mixture into a large 9 inch by 3 inch loaf and place on a sheet pan. 
  6. Cook for 30 minutes. While meatloaf is cooking, make the glaze by stirring together the ketchup, brown sugar and mustard. Spread the mixture over the meatloaf and then cook for another 30 minutes. 
  7. Let sit for 10 minutes and then slice and serve.
