Description

Instant Pot homemade beef meatballs with marinara sauce, rice and cheese.


Ingredients

  • 1 pound lean ground beef (I used 93/7)
  • 1/2 cup uncooked quick oats
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 Tbsp minced dried onion
  • 1 egg
  • 1 1/2 cups chicken or beef broth
  • 1 cup converted rice
  • 1 (25 oz) jar pasta sauce
  • 1/2 cup whole milk mozzarella cheese (or a cheese blend like colby monterey jack)

Instructions

  1. In a mixing bowl add the beef, oats, chili powder, salt, garlic powder, onion and egg. Use hands to mix just until combined. Form into meatballs and set aside.
  2. Pour the broth into Instant pot. Sprinkle in the rice. Place meatballs evenly into the pot. Dump the spaghetti sauce on top. Don’t stir.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  4. Sprinkle the cheese on top and let it melt. 
  5. Serve and enjoy!
