Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 celery rib, diced
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1 cup water or beef broth
  • 1/2 cup long grain white rice or converted rice
  • 1 (16 oz) can refried beans
  • 1 (4 oz) can diced green chiles
  • 3/4 cup pace picante sauce (I used mild)
  • 1 cup shredded cheddar cheese
  • 2 cups tortilla chips
  • 1/2 cup sliced or diced tomatoes

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions and celery. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder, chili powder and cumin.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking.  Turn off Instant Pot.
  3. Sprinkle in the rice. Dump in the beans, green chiles and picante sauce. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir well. Sprinkle the top with cheese, chips and tomatoes. Serve and enjoy!
