Description

An easy crockpot or Instant Pot dinner made with tender beef, potatoes, carrots and onions.


Ingredients

1 ½ cups beef broth

1 Tbsp tomato paste

1 Tbsp Worcestershire sauce

1 bay leaf

20 oz beef round steak

1 medium onion, halved and thinly sliced

3 carrots, peeled and cut into 1 inch chunks

6 peeled garlic cloves

16 oz Russet potatoes, peeled and quartered

1 ½ tsp kosher salt

½ tsp black pepper

½ tsp dried thyme

½ tsp paprika

½ tsp garlic powder

2 Tbsp butter


Instructions

Slow Cooker Instructions

  1. Add broth, tomato paste and worcestershire into slow cooker and stir. Add in the bay leaf.
  2. Cut the beef into 2 inch chunks. Add to the slow cooker along with the onion, carrots, garlic and potatoes.
  3. Sprinkle in the salt, pepper, thyme, paprika and garlic powder. Cut the butter into 8 pieces and add into the slow cooker.
  4. Cover and cook on HIGH for 4 hours or on LOW for 6-8 hours.
  5. Stir and serve.

Instant Pot Instructions

  1. Add broth and worcestershire and bay leaf into Instant Pot..
  2. Cut the beef into 2 inch chunks. Add to the Instant Pot along with the tomato paste, onion, carrots, garlic and potatoes.
  3. Sprinkle in the salt, pepper, thyme, paprika and garlic powder. Cut the butter into 8 pieces and add on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting.
  5. Stir and serve.
