Description

An easy dump and go slow cooker recipe for beef stew with potatoes, carrots and fire roasted tomatoes.


Ingredients

Scale
  • 20 ounces beef stew meat
  • 1 (14.5 oz) can fire roasted diced tomatoes
  • 1 Tbsp dried onion
  • 1 3/4 cup baby carrots
  • 2 ribs of celery, sliced
  • 13 ounces red potatoes, cut into 1/2 inch cubes
  • 2 Tbsp quick cooking tapioca
  • 2 tsp Better than Bouillon beef base
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 tsp dried marjoram
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp red wine vinegar
  • 1 cup water

Instructions

  1. Stir all ingredients into the slow cooker.
  2. Cover and cook on low for 6 hours. 
  3. Ladle into bowls and serve.
