Description

An easy one-pot dinner made with ground chicken, cabbage, rice, ginger and garlic, then topped with crunchy wonton strips. Make it fast in the Instant Pot.


Ingredients

Scale
  • 1 tsp canola oil
  • 16 oz ground chicken
  • 1/8 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup chicken broth
  • 1/4 cup low sodium soy sauce
  • 1 tsp sesame oil
  • 3 garlic cloves, minced
  • 1 Tbsp fresh grated gingerroot
  • 2/3 cup converted rice
  • 3 cups chopped or shredded cabbage
  • 1 Tbsp seasoned rice vinegar
  • Wonton strips, for topping

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the ground chicken and break it up. Stir in the salt, pepper and garlic powder. Cook until no longer pink. 
  2. Pour in broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in soy sauce, sesame oil, garlic cloves and ginger. Sprinkle in the rice and dump cabbage over the top, don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the vinegar. Serve topped with wonton strips. Optional toppings are green onion and sriracha.
