Chicken All Dressed Up.
My dad used to make this a lot it is a old family favorite. I remember when I was little one of the reasons I actually ate it was because it was so fun to say “chicken all dressed up” even now it makes me smile.
Ingredients:
4-6 pieces of chicken (I used thighs but you can use breast too)
1 cup catsup
1/4 cup brown sugar
2 Tbsp lemon juice
1Tbsp mustard
1tsp salt
Mix all ingredients (except the chicken) to make the sauce it works great to double if you want more sauce put the chicken on the bottom of the pot and pour sauce over the top. You can put washed whole potatoes for more the baked potato style just make sure they are touching the bottom or you can slice them up and put them on top of the chicken. Cover and cook high for 3 hrs depending on if you use breast or thighs you might need to cook 30 min- 1 hr longer, if so just flip the chicken and roll the potatoes and it still turns out great. This also tastes great on rice too.
This is such a go to recipe when ever I don’t have time to really work on dinner I always seem to have everything to make this up.
I give this recipe 5 stars it is simple and it tastes great. I also like to make a little extra so we have left overs for lunch the next day.
