Description

An easy Instant Pot dinner made with ground beef, creamy Arborio rice, ranch seasoning and melty cheese for a rich one-pot meal.


Ingredients

Scale
  • 8 oz lean ground beef
  • 1 Tbsp minced dry onion
  • 1 (1 oz) packet dry ranch dressing mix (3 Tbsp)
  • 2 cups beef or chicken broth
  • 1 cup arborio rice
  • 2 oz cream cheese
  • 1/2 cup cheddar cheese
  • Milk, to loosen as needed
  • Sliced green onion, for serving

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes, drain off excess grease. Stir in the ranch dressing mix.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Add cream cheese on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cheese. Add milk, as needed, to loosen up (I stirred in 1/3 cup).
  6. Serve topped with green onion.
