Description

Rice and red beans with ground beef and ham made fast in the Instant Pot.


Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 1 1/2 cups beef or chicken broth
  • 1 cup raw converted rice
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 4 oz ham cubes
  • 3 Tbsp tomato paste
  • 1 (8 oz) can tomato sauce

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease. Add in the garlic powder, salt, sugar and pepper. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Dump the beans, ham, tomato paste and tomato sauce on top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes then move valve to venting and remove the lid.
  5. Stir well. Serve and enjoy!
