Description
A slow cooker (or dutch oven) dish loaded with sausage, beans, and peppers simmered in a tangy barbecue and tomato sauce. It’s perfect for pairing with garlic bread.

- 1 Tbsp olive oil
- 1 (12 oz) package beef smoked sausage
- 1/2 cup diced onion
- 1/2 cup diced green pepper
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1/8 tsp smoked paprika
- 1 (15 oz) can diced tomatoes, drained
- 1 (15 oz) can ranch style beans
- 1 Tbsp barbecue sauce
- 1 Tbsp quick cooking tapioca (optional)
Instructions
Slow Cooker Instructions:
- Heat a pan over medium high heat add in the oil and swirl around (I do this step right in my slow cooker because it has a “stovetop” setting). Add in the sausage, onion and green pepper. Saute for 5 minutes.
- Stir in the chili powder, cumin, garlic powder, smoked paprika, tomatoes, ranch style beans, barbecue sauce and tapioca.
- Cover slow cooker and cook on high for 2 hours or on low for 3-4 hours.
- Stir and serve with garlic bread.
Dutch Oven Instructions:
- Heat a dutch oven over medium high heat add in the oil and swirl around. Add in the sausage, onion and green pepper. Saute for 5 minutes.
- Stir in the chili powder, cumin, garlic powder, smoked paprika, tomatoes, ranch style beans, barbecue sauce and tapioca.
- Cover and bake in the oven at 250° F for 1 ½ hours.
- Stir and serve with garlic bread.
