Description

A slow cooker (or dutch oven) dish loaded with sausage, beans, and peppers simmered in a tangy barbecue and tomato sauce. It’s perfect for pairing with garlic bread.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage
  • 1/2 cup diced onion
  • 1/2 cup diced green pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • 1 (15 oz) can diced tomatoes, drained
  • 1 (15 oz) can ranch style beans
  • 1 Tbsp barbecue sauce
  • 1 Tbsp quick cooking tapioca (optional)

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat add in the oil and swirl around (I do this step right in my slow cooker because it has a “stovetop” setting). Add in the sausage, onion and green pepper. Saute for 5 minutes. 
  2. Stir in the chili powder, cumin, garlic powder, smoked paprika, tomatoes, ranch style beans, barbecue sauce and tapioca.
  3. Cover slow cooker and cook on high for 2 hours or on low for 3-4 hours.
  4. Stir and serve with garlic bread.

Dutch Oven Instructions:

  1. Heat a dutch oven over medium high heat add in the oil and swirl around. Add in the sausage, onion and green pepper. Saute for 5 minutes. 
  2. Stir in the chili powder, cumin, garlic powder, smoked paprika, tomatoes, ranch style beans, barbecue sauce and tapioca.
  3. Cover and bake in the oven at 250° F for 1 ½ hours.
  4. Stir and serve with garlic bread.
