Description

An Instant Pot dinner with Italian sausage, ground beef, cajun seasoning, Rotel tomatoes, bell peppers, celery and spaghetti.


Ingredients

  • 16 oz Italian sausage (I used mild)
  • 8 oz lean ground beef
  • 1 cup diced onion
  • 2 ribs of celery, sliced
  • 3 cloves garlic, minced
  • 3 Tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp cajun seasoning
  • 2 cups beef broth
  • 1 bay leaf
  • 8 oz spaghetti
  • 1 (10 oz) can Rotel tomatoes (I used mild)
  • 1/2 of one red bell pepper, diced

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the sausage and beef and break it up. Add in the onion and celery. Brown for 5 minutes. If there is excess grease, drain it off.
  2. Stir in the garlic, tomato paste, Worcestershire and cajun seasoning.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Add in the bay leaf. Break the spaghetti in half and scatter it into the pot. Dump the Rotel tomatoes and peppers on top. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  6. Gently stir. Serve and enjoy!
