Description

Instant Pot or Slow Cooker Boy Scout Soup has beef, baked beans, potatoes, corn and more. It’s an easy soup that tastes great served with warm cornbread and honey butter. 


Ingredients

Scale
  • 1 pound ground beef
  • 1 cup diced onion
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 2 cups beef broth
  • 1 pound red potatoes, cubed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (14.5 oz) can corn, drained
  • 1 (28 oz) can Bush’s Best Homestyle Baked Beans

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the diced onion. Brown for about 5 minutes. Drain off excess grease. Stir in the cumin, chili powder, salt, pepper, garlic powder, cayenne and coat the meat. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Dump in the potatoes, tomatoes, corn and baked beans. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move the valve to venting. Remove the lid. 
  5. Stir and ladle into bowls and serve.

Slow Cooker Instructions: 

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the diced onion. Brown for about 5 minutes. Drain off excess grease. Stir in the cumin, chili powder, salt, pepper, garlic powder, cayenne and coat the meat. Add to the slow cooker.
  2. Add in broth, potatoes, tomatoes, corn and baked beans. 
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir and ladle into bowls and serve.
