Description
Ground beef, potatoes, corn and cheese. An easy Instant Pot recipe!

- 1 pound lean ground beef
- 1 cup diced onion
- 1 1/4 tsp kosher salt, divided
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1 cup chicken broth
- 4 medium red potatoes, cut into 1/2 inch cubes
- 1 (4 oz) can diced green chiles
- 1 (15 oz) can corn, drained
- 1 cup shredded cheddar cheese
- Hot sauce, optional
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in ¾ tsp salt, garlic powder, black pepper and paprika.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes and sprinkle them with the remaining ½ tsp of salt. Then add in green chiles and corn. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Gently stir in the cheese. Salt and pepper to taste.
- Serve topped with a few drops of hot sauce, if desired.
