Description

Ground beef, potatoes, corn and cheese. An easy Instant Pot recipe!


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 1/4 tsp kosher salt, divided
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 cup chicken broth
  • 4 medium red potatoes, cut into 1/2 inch cubes
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can corn, drained
  • 1 cup shredded cheddar cheese
  • Hot sauce, optional

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Stir in ¾ tsp salt, garlic powder, black pepper and paprika.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the potatoes and sprinkle them with the remaining ½ tsp of salt. Then add in green chiles and corn. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Gently stir in the cheese. Salt and pepper to taste.
  6. Serve topped with a few drops of hot sauce, if desired.
