Description

Rice, beans, tomatoes and seasoned ground beef topped with melty cheese.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onions
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 1/3 cups beef broth
  • 1 cup converted rice
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can great northern beans, drained and rinsed
  • 1 cup shredded cheddar

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and chili powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice then dump in the tomatoes, tomato sauce and beans. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. 
  5. Sprinkle the cheese on top and let it melt. 
  6. Serve and enjoy.
