Description

Wagon wheel pasta with ground pork, seasonings, mushrooms, red sauce and cheese. An easy Instant Pot meal.


Ingredients

Scale
  • 20 ounces ground pork
  • 1/2 cup diced onion
  • 4 ounces diced mushrooms
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups chicken broth
  • 8 ounces wagon wheel noodles
  • 2 cups pasta sauce (I used Rao's)
  • 4 sweet cherry peppers, chopped (mild)
  • 1/2 cup shredded cheese (I used colby jack)
  • Fresh basil, chopped (for garnish)

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion, mushrooms, salt, pepper, garlic powder and Italian seasoning. Brown for about 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the pasta. Dump in the pasta sauce and peppers. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir. Sprinkle cheese on top and let it melt. Serve and top with some fresh basil.

Notes

Try adding a half cup of peas or a quarter cup of sliced olives.
