We like sheet pan chicken. Which is just chicken thighs with potatoes and another vegetable (some times green beans, some times asparagus, some times Brussels sprouts) laid out on a parchment paper covered sheet pan with a little olive oil and a shake or two of some seasoning (I use Rancher Steak seasoning from Wildtree). Everyone loves it and it takes 30 minutes at 350. 🙂

Thank you for so much to choose from! My favorite weeknight meal is Spaghetti – I premake homemade sauce about every 6 weeks and freeze in airtight bags – set out that morning – or last-minute defrost in bowl hot water and add to pan to slowly reheat – have time while making up the meat – and – boiling up some pasta! Awesome fresh sauce and very filling meal. I also make enough spaghetti noodles to make leftover cold pasta with another meal for that weekend or one of our favs – Egg Noodle for brunch – leftover pasta sauteed up with onion and garlic and then while good and hot add in 3-4 beaten eggs with whatever seasonings we are wanting – cook eggs til good and scrambled. Serve with fresh parsley or cilantro whatever your mood is! I always add fresh cut tomatoes to mine! Thanks again for all the great ideas to choose from!

My favorite quick weekday dinner is taco bowls. Layer lettuce, heated refried beans and taco meat in a bowl. Add favorite toppings such as shredded cheese, salsa, avocado, sour cream, etc. Eat as is or scoop with corn chips

I know this is going to sound weird but I love to make and eat chili served on fried rice. Make your favorite chili; melt butter in a skillet and add chili oil and quickly fry rice. Move to a plate or bowl and spoon chili over it and top with shredded cheddar cheese, sour cream and tortilla chips.
