Description

Seasoned ground pork with red potatoes, butternut squash, spinach and parmesan. A one pot meal made fast in the Instant Pot.


Ingredients

Scale
  • 1 pound ground pork
  • 1 cup diced onion
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp poultry seasoning
  • 1 tsp black pepper
  • 1/2 cup chicken broth
  • 12 ounces red potatoes, cut into 1/2 inch cubes
  • 12 ounces butternut squash, cut into 1/2 inch cubes
  • 3 cups spinach
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic powder, salt, poultry seasoning and pepper. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the potatoes. Place a tall trivet* into the pot. Add the squash into a pan* that fits inside your Instant Pot. Place the pan on top of the trivet.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Remove the pan and trivet and dump the squash into the pot. Stir in the spinach and parmesan.
  6. Serve and enjoy!
