Description
Seasoned ground pork with red potatoes, butternut squash, spinach and parmesan. A one pot meal made fast in the Instant Pot.
Ingredients

- 1 pound ground pork
- 1 cup diced onion
- 2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp poultry seasoning
- 1 tsp black pepper
- 1/2 cup chicken broth
- 12 ounces red potatoes, cut into 1/2 inch cubes
- 12 ounces butternut squash, cut into 1/2 inch cubes
- 3 cups spinach
- 1/3 cup shredded parmesan cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic powder, salt, poultry seasoning and pepper.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the potatoes. Place a tall trivet* into the pot. Add the squash into a pan* that fits inside your Instant Pot. Place the pan on top of the trivet.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Remove the pan and trivet and dump the squash into the pot. Stir in the spinach and parmesan.
