Description

A ground beef and pasta recipe with cheese, tomatoes and corn. An easy one pot meal. 


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp Italian seasoning
  • 4 cups chicken broth
  • 1 (16 oz) box medium shell pasta
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can corn, drained
  • 1 Tbsp balsamic vinegar
  • 1 tsp sugar
  • 1 cup shredded mozzarella cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease, drain it off. 
  2. Stir in the garlic powder, salt, pepper and Italian seasoning. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Sprinkle in the pasta evenly. Dump in the tomatoes, corn, vinegar and sugar. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  6. Stir in the cheese. Serve and enjoy!
