Description

An easy Instant Pot dinner with seasoned ground beef, rice, tomato sauce, and melty cheddar cheese.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 Tbsp chili powder
  • 1 1/2 cup beef or chicken broth
  • 1 cup converted rice
  • 2 (8 oz) cans tomato sauce
  • 1/2 cup diced green bell pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the pepper, salt, garlic powder and chili powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Dump tomato sauce evenly over the rice. Dump in the green bell pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Sprinkle the cheese on top and let it melt. Serve and enjoy!
