Description

Don’t know what to make for dinner to please the kids, teens and adults alike? Try this creamy, flavorful penne with smoked sausage and bacon. It is addicting and always a hit!


Ingredients

  • 1 Tbsp olive oil
  • 3/4 cup diced onion
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • 8 ounces mini penne pasta
  • 1 (14.5 oz) can petite diced tomatoes
  • 4 ounces cream cheese
  • 3 Tbsp dry ranch dressing mix
  • 2 green onions, diced
  • 1/3 cup bacon crumbles
  • 1/2 cup shredded colby jack cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and sausage and brown for about 5 minutes. Add in the garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Evenly sprinkle in the the penne. Dump the tomatoes, cream cheese and ranch dressing mix on top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the green onions, bacon and cheese. 
  6. Serve and enjoy!
