Don’t know what to make for dinner to please the kids, teens and adults alike? Try this creamy, flavorful penne with smoked sausage and bacon. It is addicting and always a hit!
Ingredients

- 1 Tbsp olive oil
- 3/4 cup diced onion
- 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
- 4 garlic cloves, minced
- 2 cups chicken broth
- 8 ounces mini penne pasta
- 1 (14.5 oz) can petite diced tomatoes
- 4 ounces cream cheese
- 3 Tbsp dry ranch dressing mix
- 2 green onions, diced
- 1/3 cup bacon crumbles
- 1/2 cup shredded colby jack cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onions and sausage and brown for about 5 minutes. Add in the garlic and saute for 30 seconds.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Evenly sprinkle in the the penne. Dump the tomatoes, cream cheese and ranch dressing mix on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir in the green onions, bacon and cheese.
- Serve and enjoy!
