Description

A hearty mix of ground beef, potatoes and carrots cooked in the Instant Pot or slow cooker, then folded with a homemade Alabama white BBQ sauce for a creamy, tangy twist on the classic.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 cup diced onion
  • 3/4 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 cup beef broth
  • 4 medium carrots, peeled and cut into chunks
  • 16 oz Russet potatoes, peeled and cut into 1 inch cubes

Sauce:

  • 1/2 cup mayonnaise or sour cream
  • 1 1/2 tsp apple cider vinegar
  • 3/4 tsp horseradish
  • 3/4 tsp lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp spicy brown mustard
  • 1/4 tsp white pepper
  • 1/4 tsp kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne
  • 1/2 tsp brown sugar

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease drain it off. Add in the salt, pepper, onion powder, garlic powder and chili powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Dump in the carrots and potatoes. Sprinkle the potatoes lightly with salt or cajun seasoning. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up release pressure by moving valve to venting. Remove the lid.
  5. Make the sauce by whisking together all sauce ingredients. Fold the sauce into the Instant Pot. 
  6. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef  and break it up. Add in the onions. Brown for about 5 minutes. If there is excess grease drain it off. Add in the salt, pepper, onion powder, garlic powder and chili powder. Add the mixture to the slow cooker.
  2. Stir in the broth, carrots and potatoes. 
  3. Cover and cook on low for 4-6 hours.
  4. Make the sauce by whisking together all sauce ingredients. Fold the sauce into the slow cooker. 
  5. Serve and enjoy!
