Description

An Instant Pot dish with seasoned ground beef, peppers, green beans, corn and cheddar, topped with crispy tater tots for a satisfying crunch.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 small jalapeno pepper, seeds removed and diced
  • 1 poblano pepper, seeds removed and diced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • Dash of smoked paprika
  • 1 tsp garlic powder
  • 3/4 cup beef broth
  • 6 ounces fresh green beans, trimmed and cut into 1 inch pieces
  • 3/4 cup frozen sweet corn
  • 1 Tbsp yellow mustard
  • 1 Tbsp BBQ sauce
  • 2 ounces cream cheese
  • 1 pound tater tots
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook tots according to package directions. (I used my air fryer*)
  2. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, jalapeno and poblano. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, paprika and garlic powder. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  4. Dump in the green beans, corn, mustard, bbq sauce and cream cheese. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
  6. Stir well. Sprinkle the cheese on top and let it melt. 
  7. Scoop onto plates and top with a handful of crispy tater tots.
