Western Cowgirl Casserole

I threw this recipe together with ingredients I already had in my pantry, and it turned out better than I expected. The ranch dressing mix gives everything so much flavor without needing a long list of spices. The ranch style beans make it hearty. I love that the chicken cooks right on top of the rice and shreds easily once it’s done. Finish each bowl with shredded cheddar cheese and a big dollop of sour cream for the yummiest results!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Parboiled rice–also called converted rice
  • Boneless skinless chicken breasts–or boneless skinless chicken thighs
  • Dry ranch dressing mix–Hidden Valley or your favorite brand
  • Ranch style beans–or chili beans (the flavor will be slightly different)
  • Diced green chiles
  • Frozen corn–or canned corn, drained
  • Cream of chicken soup–or cream of mushroom soup or 2 oz cream cheese
  • Shredded cheddar cheese–optional topping
  • Sour cream–optional topping

Steps

Pour broth into the Instant Pot. Sprinkle in the rice. Place chicken on top. Sprinkle the chicken with ranch dressing mix. Dump the beans, green chiles, corn and cream of chicken soup on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 8 minutes. When time is up let pot sit for 5-10 minutes and move valve to venting. Remove the lid. 

Shred the chicken and stir in back into the pot.

Serve topped with cheese and sour cream.

Notes/Tips

  • Serve topped with cheddar and sour cream. Other yummy toppings are diced tomato, diced avocado and green onions.
  • The green chiles add flavor but very little heat, making this a kid-friendly recipe. If you want a little extra heat, stir in diced jalapeños or serve with your favorite hot sauce.
  • Don’t stir the ingredients before pressure cooking. Layering them helps the rice cook properly and prevents scorching.
  • Ranch style beans are seasoned beans in a yummy sauce, don’t drain them.
  • After opening the lid, remove the chicken to a cutting board, shred it with two forks, then stir it back into the rice. This makes it easier than trying to shred it in the hot pot.
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. You can freeze leftovers for up to 3 months.
  • I know it’s weird this recipe calls for half of a can of cream of chicken soup. I like to freeze half flat in a ziploc bag and then I can use it for another recipe in the future.

Ingredients

  • 1 1/2 cups chicken broth
  • 1 cup parboiled rice
  • 16 oz boneless skinless chicken breasts

  • 1 (4 oz) can diced green chiles
  • 1 cup frozen corn
  • 1/2 (10.5-ounce) can cream of chicken soup
  • For topping: shredded cheddar cheese and sour cream

Instructions
