Texas Beef Casserole–an easy Instant Pot or slow cooker dinner made with ground beef, egg noodles, tomato sauce, veggies and melty cheese for a quick family-friendly comfort meal.

Texas Beef Casserole

This recipe reminds me of a homemade version of hamburger helper. The tomato sauce and ketchup give the noodles a slightly sweet and tangy flavor. I also love how flexible this dinner is depending on what vegetables you need to use up. Frozen peas, corn or broccoli work great. Another nice thing about this recipe is that it’s easy to adjust for different tastes. Keep it mild for kids by skipping the extra hot sauce or add a few extra dashes at the table if you want a little more heat. (This recipe is adapted from Texas Ground Beef Casserole on Daily Appetite).

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–or shallot
  • Lawry’s seasoned salt–or another brand of seasoned salt
  • Chicken broth–or water and Better than Bouillon chicken base
  • Egg noodles–or other short pasta
  • Tomato sauce–or crushed tomatoes
  • Ketchup
  • Hot sauce–or leave it out
  • Chili powder–or smoked paprika
  • Frozen mixed veggies–or frozen corn
  • Colby jack cheese–or cheddar cheese

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion and ½ tsp of the Lawry’s. Brown for about 5 minutes. If there is excess grease, drain it off. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the noodles. Dump the tomato sauce evenly over the noodles. Add in the remaining ½ tsp of Lawry’s, ketchup, hot sauce and chili powder. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Dump the frozen veggies on top and put the lid on the pot and let it sit for 5 more minutes on the keep warm setting. 

Remove the lid. Stir in the cheese. Serve and enjoy!

Notes/Tips

  • Serve with raw veggies and dip, a green salad or a slice of garlic bread.
  • If you want a creamier texture, stir in a couple spoonfuls of sour cream at the end.
  • Sharp cheddar will give the recipe a stronger cheesy flavor if you prefer that over colby jack. For best melting, shred your own cheese instead of using pre-shredded cheese.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • The slow cooker version may need anywhere from 1–2 hours on high depending on the model of slow cooker and the type of noodles used. Some slow cookers run cooler than others.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze leftovers, although the noodles will be a little softer after thawing.

Ingredients

  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp Lawry’s seasoned salt, divided
  • 1 1/2 cups chicken broth
  • 6 oz egg noodles
  • 1 (8 oz) can tomato sauce
  • 2 Tbsp ketchup
  • Dash of hot sauce
  • 1/4 tsp chili powder
  • 1/2 cup frozen mixed veggies or frozen corn
  • 3/4 cup shredded colby jack cheese

Instructions

  6. Remove the lid. Stir in the cheese. Serve and enjoy! 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion and ½ tsp of the Lawry’s. Brown for about 5 minutes. If there is excess grease, drain it off. Transfer to the slow cooker.
  2. Add broth (use 2 cups for the slow cooker version), noodles, tomato sauce, ketchup, hot sauce, chili powder and remaining Lawry’s. Stir well. 
  3. Cover and cook on high for 1 hour. Stir in the veggies and cover and cook for 10 more minutes.
  4. Stir in the cheese. Serve and enjoy!
