1 small onion, finely chopped
1/2 cup barley
2 cups chicken broth
1/2 tsp salt, or to taste
1/4 tsp black pepper
1/3 cup raisins
1/4 cup pine nuts
Melt butter in small skillet and add onion. Cook and stir until lightly browned, about 2 minutes. Transfer to a small slow cooker. Add barley, broth, salt, and pepper. Stir in raisins. Cover and cook on LOW for 3 hours. Stir in pine nuts and serve immediately. Makes 4 servings.

This is something I normally wouldn’t think of making. It was excellent. The flavors and textures of the barley, pine nuts, and raisins combined were wonderful. We served ours with this tilapia dish which was also excellent. 4 stars
