Description

An easy oven-baked chicken dinner topped with barbecue sauce, crispy bacon and melty Monterey Jack cheese. Make an extra pan for leftovers or to freeze!


Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken breasts
  • 2/3 cup barbecue sauce
  • 2/3 cup bacon crumbles
  • 2/3 cup Monterey jack cheese
  • Optional: diced tomatoes and green onions

Instructions

  1. Pound* the chicken breasts thin and even, or slice them in half horizontally to make them half as thick.
  2. Lay the chicken in a 9×13 inch pan. Sprinkle them lightly with salt and pepper.
  3. Spoon the barbecue sauce over the top. Sprinkle the bacon crumbles and monterey jack cheese over the top. 
  4. Cover with foil and bake for 20 minutes. Remove the foil and bake for 10 more minutes. Test the middle of the chicken for doneness* (it should be 165° F). 
  5. Top with diced tomato and green onion, if desired and serve.
