Day 174: Chicken-at-the-Ready

Makes 2-3 pints cooked chicken

1 large whole chicken, skinned
1 cup water

1. Place chicken in greased slow cooker. Add water.
2. Cover. Cook on low 6-8 hours.
3. Remove meat from bones, pack cooked meat into plastic freezer bags and store in freezer to use in recipes that call for cooked chicken.

I have never, ever bought a whole chicken before. I mean what in the heck do you do with a whole chicken? I saw one at the store on sale and thought maybe I could try it in the crockpot. Well, after the scary process of skinning it, it was smooth sailing. The chicken cooked beautifully and was very easy to get off the bone. I packed it in a few different freezer bags and presto! It's an easy way to make a quick dinner of chicken tetrazini, chicken enchiladas, chicken brocolli casserole, etc etc. This is a good way to make the protein source of your meal go far for cheap. I will use this process in the future for sure. 4 stars.

  2. I don't even skin it when I cook a whole chicken. It cooks fine with the skin on and it comes off supper easy when it's cooked.
