Instant Pot Explosion Casserole
–it’s like stuffed peppers exploded in this easy Instant Pot dinner. Cheese, peppers, rice, and fire roasted tomatoes make this dish so flavorful.
Ground Turkey | Onion | Broth Rice | Garlic Salt | Cayenne Italian Seasoning | Tomato Paste Fire Roasted Diced Tomatoes Bell Peppers | Sharp Cheddar
Turn Instant Pot to sauté. Add in the turkey and onion. Sauté for 5 minutes. Pour in the broth and scrape the pot. Turn off sauté setting.
Sprinkle in rice, garlic salt, cayenne, Italian seasoning, tomatoes, tomato paste and finally the peppers. Don’t stir, the ingredients should be layered.

Cover and seal. Pressure cook 3 minutes. When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid.

Turn off Instant Pot and remove the liner. Stir in the sour cream and sprinkle the cheese on top. Shred the chicken. Salt and pepper to taste. Serve and enjoy.
