A Cowboy’s Jambalaya

A Cowboy’s Jambalaya (Instant Pot)–a colorful rice dish with beef smoked sausage, celery, green pepper, tomatoes and garlic. You’re going to love how flavorful and how easy this dinner is to make.

Olive Oil | Celery | Onion | Garlic Sausage | Broth | Rice | Pepper Cajun Seasoning | Tabasco Worcestershire | Diced Tomatoes Diced Green Bell Pepper

Set Instant Pot to sauté. Add  oil and swirl. Add celery and onion and sauté 4 minutes. Add sausage and garlic and sauté 1 minute. Pour in the broth. Turn sauté setting off.

Sprinkle in the rice, cajun seasoning, red pepper, worcestershire, tabasco. Dump tomatoes and green pepper. Don’t stir.

Cover and seal. Pressure cook 4 minutes. When time is up let sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir well. Season to taste and serve.
