Recipe for Slow Cooker Zucchini and Tomato Pasta Sauce

Recipe for Slow Cooker Zucchini and Tomato Pasta Sauce #zucchini #slowcooker #crockpot
2 cups shredded zucchini
4 oz chopped mushrooms
5 medium tomatoes, diced
1 bay leaf
1/4 cup fresh parsley, chopped
4 garlic cloves, minced
1/4 tsp pepper
1 tsp garlic salt
1 tsp oregano
1 tsp basil
2 (8 oz) cans tomato sauce
1/2 medium onion, chopped
2 Tbsp quick-cooking tapioca
1 lb ground turkey sausage, browned and drained ( could do meatless or you could use some ground beef or whatever you prefer)

1.  Combine all ingredients except meat in slow cooker.  Stir to combine.
2.  Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
3.  Stir and add in meat.  Season to taste and serve over spaghetti noodles or other pasta of your choice.

Have a massive amount of zucchini you need to use?  I made mine into a pasta sauce that also utilized fresh tomatoes.  I used some delicious turkey sausage but you could make it meatless, if you want.  4 stars.

  3. no I didn't peel them. But if you want it less chunky, you probably should peel them.

  4. Love this! Easy to make and adds a uniqueness to a favorite of mine - zucchini! It tastes so good I got my nephews to eat zucchini which they usually scowl at. Thank you!
