Day 95: Pesto Beef Strata

1 lb lean ground beef

2 garlic cloves, minced
7 oz undrained diced tomatoes
5 oz condensed tomato soup
1/2 tsp dried basil
1/4 tsp salt
Dash of pepper
3 potatoes
8 oz Alfredo sauce
7 oz refrigerated pesto sauce
1/4 cup grated Parmesan cheese

In large skillet, cook ground beef with garlic, stirring to break up beef, until beef is thoroughly cooked. Drain well. Add tomatoes, tomato soup, basil, salt, and pepper. Bring to a simmer. Slice potatoes 1/8 inch thick. In medium bowl combine Alfredo, pesto, parmesan. Layer half of beef mixture, half the potatoes, and half the pesto in 3 quart slow cooker. Continue until all ingredients are used. Cover and cook on LOW for 7-9 hours or until potatoes are tender. Makes 4-5 servings.

This was kind of a weird recipe...layering a tomato meat sauce with potatoes and then pesto alfredo sauce. I was a little nervous as I was making it and then I saw it and thought, boy that sure looks gross. However, it turned out really yummy. Greg thought it was the best thing ever and gives it 5 stars. Next time I make it, I'll probably cube the potatoes instead of slicing them. I will also make sure to use extra lean ground beef (mine seemed a little greasy). I give this 4 stars.


  1. You were definitely right! that was an interesting looking combination at first, but after one bite I was hooked I loved it. I started trying to think of my "side for it" and I guess the potatoes in it is fine I think next time. I'll omit the potatoes, with just the meat mix and serve over pasta! The ONLY issue I had was all that oil sitting on top. I think between the meat and the pesto oil, it was to much. Maybe, drain the oil off the pasta next time,I don't think it will be missed =)added my link to my blog! Thanks for another great dish.
