Ranch Chicken Casserole

Texas King Ranch Chicken Casserole has the flavors from king ranch chicken with a twist from the original. This version has chicken, rice, rotel, sour cream and cream of chicken and lots of cheese.

Broth | Rice | Chicken | Cumin Chili Powder | Onions | Salt Sour Cream | Cheddar Cream of Chicken | Rotel



Pour broth into Instant Pot. Sprinkle the rice in. Place chicken on top. Sprinkle with chili powder, cumin, onions and salt.


Cover and seal. Pressure cook 4 minutes. Let pot sit 5-10 minutes then vent. Remove the lid. Move chicken to a cutting board and shred.


Heat oven 350° F. Spread the rice into baking dish. Top with chicken. Spread the Rotel on top. In a bowl, stir sour cream and cream of chicken. Add over top. Sprinkle with cheese.


Bake for 25-30 minutes. Serve garnished with chopped cilantro.
