Instant Pot Taco Lasagna
–A cross between Mexican food and Italian food…it tastes soooo good!
ground beef seasonings enchilada sauce crushed tomatoes cottage cheese sour cream egg lasagna noodles cheddar cheese
Brown the ground beef. Stir in the seasonings, then add in enchilada sauce and crushed tomatoes. Set aside.
In a small bowl, stir together the cottage cheese, sour cream and egg.

In an Instant Pot liner, add a little of the meat sauce to cover the bottom of the pan.
Layer the following 3 times: noodles, cottage cheese mixture, and meat sauce. Then sprinkle cheddar on the top.

Cover the pan with foil. Pour 1½ cups of water into the bottom of the Instant Pot. Place the pan on top of a trivet in the Instant Pot.
Cover and secure the lid. pressure cook for 22 minutes. Then release the pressure and remove the lid.
Scoop up onto plates and enjoy!
