Reuben Casserole

Instant Pot Reuben Casserole–with sauerkraut, corned beef and swiss cheese this dish has the flavors from a Rueben sandwich in the form of a one pot dinner.

Broth | Potatoes | Salt Pepper | Onion Flakes Garlic Powder | Sauerkraut Corned Beef | Sour Cream Cornstarch | Swiss Cheese Rye Bread | Olive Oil

Ingredients

Pour broth into Instant Pot. Add potatoes, onion flakes, garlic powder. Sprinkle with salt and pepper. Dump in sauerkraut and corned beef.

Cover and seal. Pressure cook 3 minutes then vent and remove the lid. Make the croutons in a pan on the stove until browned and crispy. Set aside.

Stir some liquid from the pot into the sour cream. Stir in the cornstarch as well. Add sour cream mixture to the Instant Pot. Turn to sauté to thicken. Stir the cheese in.

Scoop onto plates and top with croutons.
