Queso Rotel Chicken

Ingredients

Pour broth into Instant Pot. Add in chicken. Sprinkle with taco seasoning. Dump Rotel on top. Place a tall trivet into the pot. Place the potato halves on top of the trivet.

Cover and seal. Pressure cook 12 minutes. Let sit for 10 minutes then vent. Remove lid. Place potatoes in a bowl and mash them. Add in milk, butter, salt, and pepper.

Stir queso dip into Instant Pot. Make a cornstarch slurry. Turn to sauté. Stir in slurry to thicken the sauce. Once thickened turn off the Instant Pot.

Serve chicken and sauce over the mashed potatoes.
