Instant Pot Quarantine Casserole–with only a handful of ingredients and a few minutes you can make this low carb easy taco beef casserole.

Beef | Taco Seasoning Broth | Riced Cauliflower Tomatoes | Green Chiles Shredded Cheese

Ingredients

Turn Instant Pot to sauté. Brown beef for 5 minutes. Drain off grease. Stir in taco seasoning. Pour in the broth. Turn off Instant Pot.

Dump cauliflower on top. Then dump Rotel and green chilies. Don’t stir. Cover and seal. Pressure cook for 0 minutes. Yes, zero! Vent. Remove lid.

Stir. You can thicken with cornstarch, if desired. Stir in the cheese.

Scoop onto plates and enjoy topped with a dollop of sour cream, green onions or some sliced avocados.
