Gratin of Chicken

Instant Pot Gratin of Chicken–chicken in a homemade creamy sauce topped with browned cracker crumbs. Simple but absolutely delicious.

Broth | Chicken | Salt | Pepper Butter | Flour | Heavy Cream Tarragon | Red Wine Vinegar Dijon Mustard | Parmesan Crushed Ritz Crackers

Add broth and chicken into Instant Pot. Sprinkle with salt and pepper. Pressure cook 10 minutes. Let the pot sit for 10 more minutes then vent. Remove the lid.

Move chicken to a cutting board and chop. In a bowl mix the melted butter and flour until smooth. Add some broth from the pot. Then scrape the whole mixture into the Instant Pot.

Turn to sauté. Stir until mixture thickens. Whisk in the cream, tarragon, vinegar and Dijon mustard. Turn off the Instant Pot. Stir in the parmesan.

In a baking dish spread about 1/3 of the sauce. Lay chicken in. Pour the remaining sauce over top. Sprinkle cracker crumbs. Bake for 15-20 minutes at 375F. Serve and enjoy!
