Crispy Cowboy Casserole

Instant Pot Crispy Cowboy Casserole–a hearty casserole with rice, beans, corn, picante sauce and cheese. It’s topped with french fried onions for a crispy finish!

Ground Beef | Dried Onion Beef Base | Paprika | Water Rice | Beans | Rotel Tomatoes Corn | Garlic Powder Picante Sauce | Monterey Jack Sharp Cheddar | French Onions



Turn Instant Pot to sauté. Add the beef and brown for 5 minutes. Drain off grease. Stir in onion, beef base, and paprika to coat the meat. Lightly salt and pepper.


Pour in water and sprinkle in the rice. Dump beans, corn, Rotel, and garlic powder on top, do not stir. Pressure cook 5 minutes then let sit for 10 minutes and vent. Remove the lid.


Stir well. Stir in picante sauce and half of cheese. Sprinkle remaining cheese on top and then the fried onions. Place a air fryer lid on top and air fry for 2 minutes.


Serve and enjoy!
