Instant Pot Cowboy Meatloaf Potato Casserole
–meatloaf flavored with chili powder and BBQ sauce is topped with mashed potatoes, French fried onions and cheddar cheese.

In a mixing bowl add ground beef, onion, Italian seasoning, bbq sauce, egg, chili powder, and salt. Spread the mixture in a pot-in-pot dish. Press it flat.
Pour water into the Instant Pot. Place the pan on top of a trivet in the bottom of the pot. Place another trivet on top and place potatoes on it. Pressure cook 25 minutes.

Let sit 10 minutes then vent. Move potatoes to a bowl. Add butter. Mash the potatoes. Stir in milk and bacon. Salt and pepper to taste. Spread on top of the meatloaf.
Sprinkle the fried onions and cheese on top. Use your air fryer lid to melt the cheese for about 2-3 minutes at 400. Serve and enjoy!
