This Instant Pot Chick-fil-A Chicken Tortilla Soup is a homemade copycat version of your favorite healthy soup. It's filled with cannellini beans, black beans, corn, Rotel and chicken.
Turn Instant Pot to sauté. Add in the oil and the onions. Sauté 4 minutes. Add in the garlic. Pour in the broth and scrape bottom of pot. Turn off Instant Pot.
Add chicken, cumin, oregano and salt. Then dump in one of the cannellini beans, the Rotel, cream corn, and black beans. Set the SOUP button to 12 minutes. Let sit for 10 more minutes and then vent.
Chop or shred chicken and stir back into the pot. In a blender blend the other 2 cans of cannellini beans. Stir beans into the pot. Stir in the lime juice.
