Bubble Up Enchiladas

Instant Pot Bubble Up Enchiladas–cheese, bean and ground turkey/beef enchiladas with a twist! Biscuit dough is used instead of tortillas.

Ground Turkey | Broth Pepper | Black Beans Enchilada Sauce | Cheddar Diced Green Chiles Biscuit Dough | Salt Pepper Jack Cheese



Turn Instant Pot to sauté. Add meat and brown 5 minutes. Drain off grease. Add salt and pepper. Pour in broth. Turn off sauté. Add beans, enchilada sauce and green chiles.


Cut each biscuit dough into 6 pieces. Drop them on top. Cover and seal. Pressure cook 3 minutes. Let pot sit 5-10 minutes then vent and remove the lid.


Stir well. Sprinkle cheeses on top evenly and place lid on top and let the cheese melt for about 5 minutes.


Scoop onto plates and top with optional garnishes. Eat and enjoy!
