Broccoli Cheddar Soup

Instant Pot Broccoli Cheddar Soupreminiscent of Panera Bread’s broccoli cheddar soup, this pressure cooker version has chopped broccoli, carrots and celery simmered in a velvety smooth cheese sauce.

Butter | Onion | Celery | Carrots Broccoli | Broth | Flour | Milk Sharp Cheddar | Salt | Pepper

Ingredients

Turn Instant Pot to sauté and melt the butter. Add the onion. Sauté for 3 minutes. Add celery, carrots, broccoli and broth. Pressure cook 1 minute. Let sit 5 minutes then vent.

While the pot heats up, melt butter in the microwave. Whisk in the flour until creamy. Set aside. Grate your cheddar and set aside.

Turn to sauté. Whisk broth from the soup into the mixture. Then add that mixture into the pot. Stir until it thickens. Stir in the milk and cheese, until it melts. Add salt and pepper.

Ladle into bowls and serve. Enjoy!
