Instant Pot Broccoli Cheddar Soup–reminiscent of Panera Bread’s broccoli cheddar soup, this pressure cooker version has chopped broccoli, carrots and celery simmered in a velvety smooth cheese sauce.
Turn Instant Pot to sauté and melt the butter. Add the onion. Sauté for 3 minutes. Add celery, carrots, broccoli and broth. Pressure cook 1 minute. Let sit 5 minutes then vent.
Turn to sauté. Whisk broth from the soup into the mixture. Then add that mixture into the pot. Stir until it thickens. Stir in the milk and cheese, until it melts. Add salt and pepper.
