Makes 4 servings
6 eggs, lightly beaten
Salt and pepper to taste
2 garlic cloves, minced
3 mushrooms, sliced
1 cup fresh spinach
1/2 cup – 1 cup shredded cheese
1. Spray an oven-safe dish that fits inside your large slow cooker with non-stick cooking spray.
2. Combine the eggs, salt and pepper, garlic, mushrooms, spinach in the dish. Sprinkle the top with cheese.
3. Place dish in the bottom of the slow cooker. Cover and cook on HIGH for 90 minutes to 2 1/2 hours.
4. Slice and serve.

I had zero expectations for this dish (I wasn’t sure how the eggs would cook and if the texture would be rubbery or what). I was pleasantly surprised by how it turned out. It was delicious. My husband and my kids all ate it and thought it was great. My husband commented on the consistency of the eggs. This is a perfect brunch recipe or a quick and easy dinner. 4 stars

What type of bowl can you put in the slow cooker? I just have a 2/3 quart cooker. Can you just put the mixture in the slow cooker itself?

I was still wondering about cooking it on LOW for double the cooking time at the HIGH setting. I'm cooking it tomorrow for a crowd and all my other recipes are 4 hours on high or 8 on low. Thanks!

I would do 4 hours on low. I wouldn't cook for much longer than that. I'd fear that the eggs will get rubbery.

It can be doubled. But I don't think you'll need to actually double the cooking time. It may take a half hour longer but not double!

Could you elaborate on the cooking time? That's an hour difference! What are we looking for that would signify doneness and why would we possibly need an extra hour? Planning supper requires a soecific time frame and I'm guessing that overcooked eggs would be gross.

It totally depends on your slow cooker. I have 10 different slow cookers and they all cook differently. Some cook hotter than others. Those one's would probably take about 90 minutes but the others would take a bit longer. I put the range of time because everyone needs to get to know their own slow cooker and adjust recipes accordingly.
