Slow Cooker Mexican Rice and Beans with Avocados

Ingredients

- 2 garlic cloves, minced
- 1/2 jalapeno, minced
- 1 1/4 cup brown rice
- 2 cups vegetable broth or chicken broth
- 1 (4 oz) can green chiles
- 1 (14.5 oz) can black beans, rinsed and drained
- 1 1/2 cups picante sauce or salsa
- 1 cup frozen corn
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 bay leaf
- 1 1/2 cups grated cheddar
- 1/3 cup cilantro leaves
- 1/2 cup sour cream
- 1 avocado, diced
Instructions
- Add garlic, jalapeno, brown rice, broth, chiles, beans, salsa, corn, chili powder, cumin, pepper, salt and bay leave to the slow cooker. Stir to combine.
- Cover and cook on HIGH for about 3 hours, or until rice is cooked through.
- Discard the bay leaf. Sprinkle cheddar over the top and let it melt. It will only take a couple of minutes.
- Top individual servings with cilantro, a dollop of sour cream and avocados.

Can you add some ground meat to this? Would that change the stock amount and cooking time?

You can add some browned ground meat and it won’t change anything else.

Can I freeze this for a quick meal to throw in? Do I need to leave out the broth?

Yes I bet that would work. Freeze all but broth in a bag then when ready to cook add it all in. Cooking time will be increased by maybe 1 1/2 to 2 hours.

We LOVE this in our house. We make lots of tacos, burritos, enchiladas, etc. and this is always our go to side dish. I usually make it in a 6qt slow cooker (just now saw that a 3qt is recommended which I will try, but I’ve never had an issue in my 6qt) because we like to use the slow cooker liners. I’ve also taken this to work for potlucks with a baggie of the spices, minced jalepeno, and minced garlic so I can dump everything in 3 hours before lunch. Makes the office smell great and it’s a crowd pleaser.

yes white rice cooks in about half the time as brown rice!

It should be fine in the 6 quart…it may cook a little faster than stated on the recipe though.
