These slow cooker garlic green beans are flavorful and perfectly seasoned. My husband thought they were the best thing ever. A literal quote, “Those are the best beans I’ve ever eaten in my life.” They were still fairly crisp, which is how I prefer them. This is a simple and easy recipe that can be made ahead of time for a family dinner.
Makes 6 servings
1 lb fresh green beans, washed and trimmed
2 Tbsp extra virgin olive oil
1 tsp salt
1/4 tsp pepper
1 packed tsp minced garlic (about 2-3 cloves)
bacon bits (optional)
1. Place an oven safe dish that fits inside your slow cooker in the bottom of the slow cooker (I have a corningware dish that is 1.6 liters).
2. Place green beans inside dish. Drizzle with olive oil. Stir in the salt and pepper and garlic.
3. Cover and cook on LOW for 3-4 hours or on HIGH for 1-2. Remove dish from slow cooker and serve directly from it. Top with bacon bits, if desired.

Why do you add the extra dish??
Kim Kearney says
I would think some liquid would be required. No?
Karen says
nope! not in the slow cooker, works fine

Thank you!!

If you can cook the green bean in the slow cooker WITHOUT them being in the extra dish inside, what would the purpose or benefit have been to even DO it that way? Especially if it only takes half the time.
Heather says
How does the cooking time differ if you double the recipe and not use the extra dish inside?
Karen says
I would keep the cooking time the exact same if you did that.
Terry says
If I double the recipe, do I double the cooking time? Planning on doing without dish in crockpot.
Karen says
no need to double the cooking time. It should cook in the same amount of time.

Could I use a mixture of vegetables such as green beans, asparagus, and snow pead

Oh, I'm sure you could! That sounds delicious 🙂

I am sure snow peas would be good cooked this way. I am going to try them for Christmas.

Thank you!!! This was for Sunday Lunch and I was just going to dive in and try it — but the timing is an important detail! 🙂 Appreciate your time! So will my guests! 🙂
Karen says
Debbie, you don't really need a dish inside. Just place right inside the crock. It will take about half as much time though.
Debby says
Hi! Recipe looks fantastic! However, I have no dish that will fit inside my slow cooker — any suggestions?
Crystal says
Soooo, have you tried the asparagus, yet?
Karen says
No I didn't cover the dish. Thanks for the clarification!

Did you also cover the dish that the green beans were in, or did you leave that uncovered and only covered the slow cooker?
Thanks

Those beans sound delicious. I'll have to give it a try. Thanks for the recipe. I just made my first foray into the kitchen and slow cooker with a chicken stew. The family was impressed, so that's something.
