We all loved this coconut quinoa and we served ours with chicken. It’s slightly sweet and savory too. A perfect combination of island flavor!
The coconut milk makes it so creamy and flavorful. And the black beans gives it some protein and a little fiber. Hope you like this as much as we did 🙂
This was so tasty and easy to make. Due to time limitations, I cooked this on high for 1.5hrs – tasted so good. We added some steamed broccoli and avocado to our bowls as a finishing touch. Thanks for the great recipe.
First of all, ladies, I would like to say that I loved your video. Great job!!! I absolutely tasty dish!!! I doubled the recipe because my husband and I both like quinoa and I knew he would gobble it all up. Doubling the recipe came out perfect. I did add extra cooking time due to that. At this time, I am not eating meat, so I wanted this to be a one-dish wonder. I used everything you said except I left out the sugar. I also added kale, onions, and fresh garlic. Not only does it taste wonderful, but the smell is delicious as it’s cooking, and the kale adds a nice burst of color. I will be making this dish over and over and over. I looked at quite a few recipes, but when I came to yours, I was like “This is it”! And it was awesome!!! Thank you so very much!!!
